The Ohio State Fair’s New Deviled Egg Flavors Are Absolutely Unhinged

Ohio’s got plenty of fair food classics: funnel cake, deep-fried everything, lemonade shaken within an inch of its life. But the most buzzworthy bite at the Ohio State Fair comes in the form of an egg. A deviled egg, to be exact. And not just any deviled egg.

The 2026 flavors

The Ohio Poultry Association revealed its 2026 lineup on July 22, and the whole thing is built around America’s 250th birthday. The featured flavor is Birthday Cake: a sweet vanilla egg finished with an icing drizzle and red, white and blue sprinkles. Yes, on a deviled egg.

They’ve turned everyone’s favorite nostalgic dessert into a deviled egg.

Birthday Cake headlines a six-egg “America 250” flight, so the rest of the cookout comes along with it. Here’s the full 2026 lineup.

The Ohio Poultry Association’s stated reason for all this is the same as always, which is to show off how far a plain egg can be pushed. The America 250 theme just gave them a bigger excuse than usual.

Where to find the deviled eggs at the fair

This is the part worth reading twice, because the eggs aren’t where they used to be. The Taste of Ohio Cafe and the Agriculture and Horticulture buildings have been combined into one new building, the Ohio Agriculture Center, which opens with this year’s fair. The deviled eggs are at Deviled Egg HQ, right next door, served daily from 10:30 a.m. to 9 p.m.

The booth keeps a couple of regional standbys on the menu alongside the America 250 flight, including the Columbus Pizza egg and a Cincinnati Chili version. Plain deviled eggs are sold too, for anyone who showed up with a more conservative agenda.

Deviled egg flavors from past years

The reveal has turned into a small Columbus ritual, and the back catalog is why. The 2025 headliner was Chocolate Chip Cookie Dough, backed by a flight of Hot Honey Everything, Sriracha Peach, Columbus Pizza, Spicy Crunchy and Cranberry Feta. Columbus Pizza did well enough to survive into this year’s menu.
