After A Sudden Fall Closure, Rosebud’s Plans A Big Comeback

Well, well, well… the Delaware rumor mill was right. Chef Josh Dalton has officially confirmed what locals have been whispering, hoping, and borderline manifesting for the last month: Rosebud’s is coming back.

Dalton made the announcement on social media this week, joking that Delaware could “power the whole state” with all the speculation surrounding the return of the beloved restaurant he closed just a few months ago. And, truly, the buzz has been intense.

When Rosebud’s closed in October, it felt a little like Delaware got ghosted by its favorite date-night spot.

Dalton called the closure “bittersweet,” saying the space on East Winter Street had always been more than a restaurant—it was a home for ideas, risks, and dreams.

For years, the address at 15 E. Winter St. was Dalton’s creative laboratory, spawning concepts that now thrive in Columbus: Veritas, Speck, and more recently, a whole slate of new restaurants planned for downtown. When he shut the Delaware locations to shift focus to those upcoming projects, including a Mediterranean restaurant on the Scioto Mile and Rosalita’s on Gay Street, it made sense… but it still stung.

Which is why this comeback hits differently.

In the announcement, Dalton said the hiatus allowed him to handle behind-the-scenes details and build a strong, experienced team for the relaunch. He’ll take on more of an advisory position, focusing on menus and concept direction while his staff leads the day-to-day.

If anything, he seems genuinely excited to not be the star of the show. (A bold stance for a chef with multiple restaurants and a reputation for making diners swoon.)

No firm opening date yet, but Dalton says updates are coming soon.

And given how Delaware reacted to the closure (and how central Ohio diners will drive anywhere for good food), you can expect a very enthusiastic crowd waiting for the lights to flip back on.

One thing’s for sure: When Rosebud’s returns, it won’t just be a reopening. It’ll be a full-circle moment for a restaurant space that has launched some of Columbus’ most beloved dining spots, and a very welcome reunion for the people who never stopped asking, “When’s Rosebud’s coming back?”
