Caroline’s Becomes First Merchant Announced For North Market Expansion

A favorite pop-up inside North Market Downtown is putting down some roots.

Caroline’s, the sandwich-focused concept from local chef Justin Wotring, is now a permanent merchant after launching as a limited-time pop-up in October 2025. What started as a short run quickly built a following, thanks to its lineup of gourmet sandwiches, fresh salads, and seasonal soups that lean into comfort without cutting corners.

Now the concept is settling in for the long haul. Beginning in April, Caroline’s will operate seven days a week from its current spot in the northeast corner of the Market, right alongside North Market Butchery, another Wotring-led operation.

The move comes with a bigger milestone, too. Caroline’s has been named the first announced merchant in North Market Downtown’s upcoming expansion project, which is set to open later this year. That expansion will bring a wave of new energy to the historic market with seven chef-driven merchant spaces, a larger bar, more seating, gathering areas, and a dedicated private event space.

Additional merchants will be announced in the coming months, but Caroline’s is setting the tone.

“Caroline’s has been an incredible addition to the Market,” said Rick Harrison Wolfe, Executive Director and CEO of North Market. “The response from our community made it clear that this concept needed to stay.”

For Wotring, the partnership feels like a natural fit. Caroline’s joins a space that has long been home to independent food makers and small businesses, something that aligns closely with the concept’s identity.

“I’ve always believed that food should bring people together,” Wotring said. “The North Market has been doing that for 150 years.”

The current location will remain open through construction, with Caroline’s eventually relocating into the new expansion space once it’s completed in late 2026.
