Kolache Republic Is Our New Breakfast Obsession

I think it would be fair to say that when the average Ohioan thinks about breakfast food, they probably aren’t thinking of kolaches.

These delightful breakfast pastries first came on the scene here in Columbus at Kolache Republic when they opened a few years ago. They’ve flown under the radar for way too long though, it’s officially time to introduce this city to its next obsession.

If you are lucky enough to have already tried a kolache, then I’m sure you’ll want to join me in letting everyone else in on this secret.


A kolache is a Czech pastry made of somewhat sweet dough baked and filled with a variety of fillings, including fruits, nuts, sweet cheeses, and meats. The dish is very popular in areas of the US that have large Czech populations, including Texas, where owner Rick Jardiolin grew up.

After a night of drinking in the Lone Star State, Rick and his friends, Doug and Dusty, decided that Columbus needed kolaches and that they were going to be the ones to bring them here.

Fast forward a few years and the trio has created over 25 flavors of kolache here in the capital city.

So to help you understand what a Kolache is and why you’re going to love it, I thought I’d break this down for you.

Your kolache starts out as a lump of dough, which is flattened into a small square.

After that, it’s time for ingredients. This traditional Kolache includes cheese, sausage (made right here in Ohio at Falters) and jalapenos.

First up is the cheese. It is placed about halfway off of the dough, like so:

If you’re getting yours with jalapenos, they will be placed on the bottom half of the cheese, with the top of the cheese folded over, creating a delicious, cheesy sleeping bag of sorts.

On top of the folded cheese, you’ll find the sausage.

Then the sides of the dough are folded up around the sausage and it’s rolled into a yummy little log.

When they come out of the oven, they are delicious, golden looking mini-loafs of bread, hiding the surprise of flavor that awaits you.

Kolache doesn’t just serve these traditional style pastries. The menu includes sweet kolaches, like their Pistachio kolache:

And their breakfast kolaches, which come with a variety of breakfast fillings like eggs, hash browns, and bacon, all wrapped in a doughy bun.

So how do you get your hands on these delectable treats? Kolache Republic is located at 730 S. High Street. They are open Monday through Friday from 7 a.m. to 2 p.m. and Saturdays from 8 a.m. to 2 p.m. Heartbreakingly, they are closed on Sundays.
